Valencian-style rice
CHF 24.00
Chicken and seafood in the same pot, with saffron setting the tone.
The name comes from Valencia in Spain, and the dish is Portugal’s take on the paella. Chicken thighs brown slowly in olive oil with garlic and onion, then a splash of white wine lifts everything. Peppers, carrots and peas join them. The rice drinks the chicken stock, and saffron colours every grain golden. The seafood releases its flavour, and the whole prawns take on their pink.
On the plate the rice stays loose and golden, each grain full of stock. The chicken is tender, the seafood sweet. In Portugal this is a rice for celebrations, made for a full table.
